The ingredients needed to make Rough stew:

  1. Take 10 pcs of Fresh tomatoes.
  2. Get 10 pcs of Red pepper (Ata rodo).
  3. Prepare 1 cup of Red oil.
  4. Get 1/2 cup of Grounded dry crayfish.
  5. Prepare of Onions 1 large.
  6. Use 2 tbsp of Locust beans (iru).
  7. Use 4 pcs of Dry fish.
  8. Provide 2 pcs of Smoked Titus fish.
  9. Get of Pomo diced.
  10. Get 1 cube of any chicken flavor seasoning.
  11. Prepare 1 cube of crayfish flavor seasoning.
  12. You need to taste of Salt.

Instructions to make Rough stew:

  1. Grate the pepper, tomatoes and half onions, remove the bone of the fish, wash pomo dice and set aside.
  2. Slice the other half of the onion, rinse the Locust beans. Heat red oil in pot, don't allow it to be smokey, add onion and Locust beans. Allow it fry a bit then add grated pepper mixture. Add water, pomo and pinch of salt in another pot, let it boil for a while, it gives the pomo a nice taste, u can add seasoning if u want.
  3. Let the stew cook well for over 30mins till the water in it dries out. Add fish, pomo seasoning and salt, stir and leave to cook for 7 mins. Food is ready. Serve with rice, yam or anything of your choice.
  4. Served mine with white rice and fried diced plantain.

Finally, pop the bacon on top. Use the cobbler or dumpling recipes and adjust to suit the filling: pork and apple stew with sage and onion dumplings, say; or root vegetable and bean stew with parmesan dumplings - they all work. To make the stew, season the beef shin with salt and pepper and sear in a heavy-based pot in a splash of oil until browned on both sides. Remove the shin from the pot and set aside. In the same pot, fry the onion, celery and carrots until soft and fragrant.
